Is Amsterdam Centraal and the IJ good for a photoshoot?

Why Amsterdam Centraal and the IJ works on camera
Most of central Amsterdam is enclosed: narrow canals, trees and four-storey houses. The IJ is the opposite, a broad stretch of water under open sky, and it gives a sense of scale the canal belt cannot. From the Noord bank you can place people against the water with the old city's skyline behind them, or turn round and use the white, angular Eye Filmmuseum as a clean modern background.
The ferry is part of the shoot. The crossing is short, free and frequent, and standing at the rail gives wind-in-the-hair frames with the city sliding past. It pairs well with an old-city location on the same day, such as the Brouwersgracht, about ten minutes' walk from the station.

The front of the station, with its two towers and decorated brickwork, faces the city. Shoot from the edges of the square early in the day, clear of trams and cycle lanes.

The ferry to Buiksloterweg
The short crossing to Noord leaves from behind the station. Stand at the rail for frames with the water and the skyline behind you; it fills with bikes at rush hour.

The Eye Filmmuseum waterfront
The white, angular film museum beside the Buiksloterweg landing has a waterside terrace facing the city. The most versatile spot here, with open sky and evening light.

The A'DAM Tower
The former Shell office tower next to Eye gives a strong vertical background. The lookout at the top is a separate paid attraction; the area around the base is open.

Opposite the station on the Prins Hendrikkade, the domed basilica gives a classic church backdrop a few minutes' walk from the ferries.

Practical notes
Ferries. The GVB ferries are free for foot passengers and cyclists and run frequently. At rush hour they fill with bikes, so plan the crossing outside commuting times if you want room on deck.
Inside the station. Stations are run by the rail companies, and organised photography inside or on the platforms may need their permission. Keep the session outside unless your photographer has arranged it.
Traffic. Stationsplein and the Prins Hendrikkade are among the busiest places in the city for trams, buses and bikes. Stay on the pavement and out of cycle lanes.
Wind. The IJ is open water and noticeably windier than the canals. Bring a layer and expect hair to move.
Drones are not allowed here: the whole city lies within Schiphol's controlled airspace.
Local tip: The ferries to Noord leave from the IJ side, behind the station. The one to Buiksloterweg is a crossing of a few minutes and lands right next to the Eye Filmmuseum.
